Description

These Savory Crepes with Spinach, Cheese, and Ham are a delicious and hearty dish perfect for breakfast, lunch, or dinner. The combination of fresh spinach, melted cheese, and savory ham wrapped in a light crepe makes for a satisfying meal that is both nutritious and flavorful.

Ingredients

Scale

1 cup all-purpose flour

2 large eggs

1 1/2 cups milk

2 tablespoons melted butter

1/4 teaspoon salt

1 teaspoon garlic powder (optional)

1 cup fresh spinach, chopped

1 cup shredded cheese (e.g., gruyère or cheddar)

4 slices of ham, chopped

Salt and pepper to taste

Olive oil or butter for cooking

Instructions

Heat a non-stick skillet over medium heat and lightly grease it with olive oil or butter.

Pour about 1/4 cup of the batter into the skillet, swirling to spread the batter evenly into a thin layer.

Cook for about 1-2 minutes until the edges start to lift and the bottom is lightly golden. Flip and cook for an additional minute on the other side. Remove from the skillet and repeat with the remaining batter.

Prepare the Filling:

In a bowl, mix the chopped spinach, shredded cheese, and chopped ham. Season with salt and pepper to taste.

Assemble the Crepes:

Place a crepe on a plate and spoon a portion of the spinach, cheese, and ham mixture onto one half.

Fold the crepe over to enclose the filling and cook in the skillet for an additional minute until the cheese melts.

Serve warm with a side salad or your favorite dipping sauce.
