Ingredients

1 cup quinoa

2 cups water

1 cup purple cabbage, shredded

1 large carrot, julienned

1 avocado, sliced

1 cup cherry tomatoes, halved

1 can chickpeas, drained

2 tablespoons sesame seeds

Quick tahini dressing:

2 tablespoons tahini

Lemon juice

Maple syrup

Salt and pepper

Water to thin


Instructions

Rinse the Quinoa: Rinse 1 cup of quinoa under cold water to remove the bitter coating.

Cook the Quinoa: In a pot, combine the rinsed quinoa and 2 cups of water. Bring to a boil, then reduce heat and simmer for 12 minutes until fluffy.
