Ingredients
1 pound shrimp, peeled and deveined
2 tablespoons soy sauce
1 tablespoon sesame oil
2 cloves garlic, minced
1 tablespoon ginger, minced
2 cups mixed vegetables (e.g., bell peppers, snap peas, broccoli)
2 tablespoons vegetable oil (for cooking)
1 teaspoon cornstarch (optional, for thickening sauce)
Cooked rice or noodles, for serving
Green onions, sliced (for garnish)
Sesame seeds (for garnish)
Instructions
Marinate the Shrimp: In a bowl, combine shrimp, soy sauce, sesame oil, minced garlic, and ginger. Let it marinate for about 5 minutes while you prep the vegetables.
Prepare the Vegetables: Wash and chop your mixed vegetables into bite-sized pieces.
Heat the Pan: In a large skillet or wok, heat the vegetable oil over medium-high heat.
Cook the Shrimp: Add the marinated shrimp to the pan and cook for about 2-3 minutes until they turn pink and opaque. Remove the shrimp from the pan and set aside.
Stir-Fry the Vegetables: In the same pan, add the mixed vegetables and stir-fry for 3-4 minutes until they are tender-crisp.
Combine and Serve: Return the cooked shrimp to the pan and stir to combine. If you’d like a thicker sauce, mix cornstarch with a bit of water and add it to the pan. Cook for another minute until heated through. Serve over cooked rice or noodles, garnished with green onions and sesame seeds.
