1 cup heavy cream

4 egg yolks

½ cup grated Parmesan or Gruyere cheese

2 tablespoons sugar (for caramelizing)

Optional:

Zest of 1 lemon

A pinch of cayenne pepper

Fresh herbs (like parsley or chives) for garnish


Instructions

In a large mixing bowl, combine the crab meat, heavy cream, egg yolks, grated cheese, and optional ingredients (lemon zest and cayenne pepper). Mix until smooth and well combined.

Bake the Brulee:

Preheat your oven to 325°F (160°C).

Pour the crab mixture into individual ramekins. Place the ramekins in a baking dish and fill the dish with hot water to create a water bath.

Bake for 25-30 minutes, or until the mixture is set but still slightly jiggly in the center.
