Ingredients

1 cup all-purpose flour

2 large eggs

1 1/2 cups milk

2 tablespoons melted butter

1/4 teaspoon salt

1 teaspoon black pepper

4 slices of bacon, cooked and crumbled

2 large eggs (for filling)

1/2 cup shredded cheese (e.g., cheddar or mozzarella)

Fresh chives or parsley (for garnish, optional)


Instructions

Prepare the Batter:

In a mixing bowl, whisk together the flour, eggs, milk, melted butter, salt, and black pepper until smooth. Allow the batter to rest for about 15 minutes.

Cook the Crepas:

Heat a non-stick skillet over medium heat and lightly grease it with butter.

Pour about 1/4 cup of the batter into the skillet, swirling to spread the batter evenly into a thin layer.

Cook for about 1-2 minutes until the edges start to lift and the bottom is lightly golden. Flip and cook for an additional minute on the other side. Remove from the skillet and repeat with the remaining batter.

Prepare the Filling:

In a small skillet, scramble the 2 large eggs over medium heat until fully cooked. Season with salt and pepper.

Assemble the Crepas:

Place a crepa on a plate and add a portion of scrambled eggs, crumbled bacon, and shredded cheese on one half.

Fold the crepa in half and let it sit for a minute to allow the cheese to melt slightly.
