1 cup all-purpose flour

2 large eggs

1 1/2 cups milk

2 tablespoons melted butter

1/4 teaspoon salt

1 teaspoon vanilla extract (optional)

Whipped cream (for topping)

Maple syrup or chocolate syrup (for drizzling)

Powdered sugar (for garnish)


Instructions

Prepare the Batter:

In a mixing bowl, whisk together the flour, eggs, milk, melted butter, salt, and vanilla extract until the batter is smooth and free of lumps. Let it rest for about 15 minutes.

Cook the Crepas:

Heat a non-stick skillet over medium heat and lightly grease it with butter.

Pour about 1/4 cup of the batter into the skillet, swirling the pan to spread the batter evenly into a thin layer.

Cook for about 1-2 minutes until the edges lift and the bottom is lightly golden. Flip and cook for an additional 1 minute on the other side. Remove from the skillet and repeat with the remaining batter.

Assemble the Crepas:

Place a crepa on a plate and spread a generous amount of whipped cream over one half.

Drizzle with maple syrup or chocolate syrup, then fold the crepa in half.

Dust with powdered sugar before serving.
